WThis is a home-style interpretation of a drink featured on a new cocktail list. This is a large-volume prepared mix that is loaded with essence of the Christmas time, rendering it perfect for a festive gathering. Reserve the remaining syrup for morning drinks, desserts, or for additional servings of the drink.

200ml fresh lemon juice
500g caster sugar

For the Drink (yields 850ml, enough for 10)

200ml clementine cordial (see above)
A few cranberries, as a garnish

Instructions

To prepare the Syrup: Combine all the items in a pot, heat until it reaches a light boil, agitating so the sugar melts. Then, remove from the burner and leave to cool down fully. Transfer into an sterilised bottle, cap it and store chilled, it will last for up to a month.

Preparing the Premix: Pour every liquid ingredients in a big jug, let it rest for one hour, then strain preferably using cheesecloth, to ensure it's fully clarified.

When ready to serve: Add 85ml from the premix into a cocktail shaker containing ice, and agitate lightly for one minute until cold. Strain into a cold coupe glass or similar, top with the cranberries and complete it using a brief mist of mandarin oil over the drink.
